Description

Mini Garlic Parmesan Meatloaf Muffins are juicy, flavorful, and perfectly portioned for easy weeknight dinners or meal prep.


Ingredients

  • 1 lb ground beef
  • 2/3 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup whole milk
  • 2 large eggs
  • 4 garlic cloves, minced
  • 1/2 small onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup ketchup (optional, for topping)
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat oven to 375°F and grease a muffin tin.
  • In a large bowl, combine all ingredients (except ketchup and garnish).
  • Divide mixture evenly into muffin cups.
  • Top with ketchup if using.
  • Bake 20–25 minutes until cooked through.
  • Garnish with parsley and serve warm.
