Instructions

- Mix in Meyer lemon juice, lemon zest, and salt until fully combined.
- Gradually add the flour and cornstarch, mixing just until a soft dough forms.
- Cover and chill the dough for 15 minutes to make shaping easier.
- Roll dough into 1-inch balls and place on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 12–14 minutes, just until set but not browned.
- Let cookies cool slightly, then gently roll in powdered sugar.
- Allow to cool completely for the perfect meltaway texture.
