This cheesy Dorito Taco Casserole combines crunchy nacho cheese Doritos, seasoned ground beef, creamy soup, and melty Mexican cheese for the ultimate easy comfort food dinner.

- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 (10 oz) can Rotel (diced tomatoes & green chilies), drained
- 1 (15 oz) can corn, drained
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup sour cream
- 2 cups shredded Mexican cheese blend
- 1 (9.75 oz) bag Nacho Cheese Doritos, crushed
- 1/4 cup chopped green onions (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, brown ground beef; drain fat.
- Stir in taco seasoning and water; simmer until thickened.
- Mix in Rotel, corn, cream of chicken soup, sour cream, and 1 cup cheese.
- Layer half the crushed Doritos in a greased baking dish.
- Spread beef mixture over chips, top with remaining Doritos and cheese.
- Bake uncovered for 20–25 minutes. Garnish with green onions if desired.
Notes
- Add jalapeños or hot sauce for extra spice.
- Substitute cream of mushroom or cheddar soup for a different flavor.
- Store leftovers in an airtight container in the fridge for up to 3 days.
