- 1 cup cooked corn (fresh, frozen, or canned)
- 1/4 cup cotija cheese (or vegan alternative)
- 1 tbsp lime juice (freshly squeezed)
- 1/2 cup rolled oats
- 1/4 tsp salt
- 1 tsp chili powder
- Optional: 1 tbsp Greek yogurt or mayo, 1 tbsp chopped cilantro, ½ tsp smoked paprika, ½ tsp garlic powder, dash of cayenne pepper
Instructions
- Prepare Ingredients – If using frozen corn, thaw and pat dry. Grill or roast for extra flavor.
- Blend Base – Process oats into coarse flour, then blend with corn, lime juice, salt, chili powder, and optional spices.
- Form Bites – Mix in cotija cheese, shape into balls, and place on a lined tray.
- Coat & Garnish – Sprinkle with extra cheese, chili powder, and cilantro, then add a squeeze of lime.
- Chill & Serve – Refrigerate for 20–30 minutes before serving.
