This Mexican Chicken with Cheese Sauce is a quick, flavorful dish featuring tender chicken in a creamy, cheesy sauce, perfect for dinner or meal prep.
Ingredients
Scale
- 1 ½ lbs boneless, skinless chicken breasts (cut into chunks)
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon paprika
- Salt and pepper (to taste)
- 1 cup chicken broth
- ½ cup sour cream
- 1 cup shredded Mexican cheese blend
- 1 tablespoon flour
- 1 tablespoon butter
- 1 teaspoon garlic powder
- ¼ cup diced green chiles
- Fresh cilantro (for garnish)
- Optional: Sliced jalapeños, lime wedges
Instructions
- Season chicken with chili powder, cumin, paprika, salt, and pepper.
- Cook chicken in olive oil until browned and fully cooked.
- In the same pan, make a roux with butter and flour, then add chicken broth, sour cream, and garlic powder.
- Stir in shredded cheese and diced green chiles to create a creamy sauce.
- Add the chicken back into the sauce and simmer for 3-5 minutes.
- Garnish with cilantro, and serve with optional jalapeños or lime wedges.
Notes
For a milder dish, reduce the chili powder and omit the diced green chiles. You can also add extra cream for a richer, smoother sauce. This dish is great for meal prep, and you can substitute Greek yogurt for sour cream for a healthier twist.
