- ¼ cup crumbled feta cheese
- For the Mediterranean dressing:
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 small clove garlic, minced
- ½ tsp dried oregano
- Pinch of salt and black pepper
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it apart, until browned and cooked through.
- Stir in garlic, oregano, paprika, cumin, salt, and black pepper. Cook for 1 to 2 minutes until fragrant. Remove from heat.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper to make the dressing.
- Assemble bowls with a base of brown rice or quinoa.
- Top with seasoned turkey, cherry tomatoes, cucumber, shredded carrots, red onion, parsley, and feta cheese.
- Drizzle with Mediterranean dressing just before serving.
- Store in airtight containers for up to 4 days.
