Ingredients
- 1 cup brown rice
- 2 cups vegetable broth
- 1 can (15 oz) beans
- drained and rinsed
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 onion
- diced
- 2 cloves garlic
- minced
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until translucent.
- Add brown rice and toast for about 2 minutes.
- Stir in vegetable broth, diced tomatoes, beans, oregano, cumin, salt and pepper. Bring to a boil.
- Reduce heat, cover and simmer for 30-35 minutes until rice is tender.
- Stir in chopped spinach just before serving and let wilt.
