Ingredients

  • 8 oz short pasta (gluten-free if needed)
  • 1 cup cottage cheese
  • ½ cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • ¼ cup sliced Kalamata olives
  • ¼ cup finely diced red onion
  • ¼ cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh basil
  • For the dressing:
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cool water.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and black pepper.
  3. In a large mixing bowl, combine cooled pasta, cottage cheese, cherry tomatoes, cucumber, olives, red onion, feta cheese, parsley, and basil.
  4. Pour dressing over the salad and gently toss until everything is evenly coated.
  5. Chill for 20 to 30 minutes before serving to allow flavors to meld. Adjust seasoning if needed and serve cold or at room temperature.
