Ingredients

  • 2 tbsp olive oil
  • 1 lb halal chicken breasts or thighs, diced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 cup sliced carrots
  • 1 cup diced potatoes
  • ½ cup sun-dried tomatoes (in oil, drained)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 6 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan (halal-certified)
  • 2 cups baby spinach
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken, seasoning lightly with salt and pepper. Cook until lightly browned.
  2. Add onion, garlic, carrots, and potatoes. Cook 3–4 minutes until softened.
  3. Stir in sun-dried tomatoes, paprika, and Italian seasoning.
  4. Pour in chicken broth and bring to a simmer. Cook 12–15 minutes until veggies are tender.
  5. Reduce heat and stir in heavy cream and Parmesan until melted and creamy.
  6. Add spinach and cook 1–2 minutes until wilted.
  7. Taste and adjust seasoning. Add red pepper flakes for heat if desired.

  • For a thicker soup, simmer a bit longer to reduce the broth.
