  • 1 cup dried green or brown lentils, rinsed
  • 1 tbsp olive oil
  • 1 small onion, diced

  • 1 can diced tomatoes (14.5 oz)
  • 2½ cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 lb potatoes, peeled and cubed
  • ½ cup milk or dairy-free milk
  • 2 tbsp unsalted butter or olive oil
  • Salt to taste

Instructions

  1. Bring lentils and vegetable broth to a boil, then reduce heat and simmer for 25–30 minutes until tender.
  2. Meanwhile, heat olive oil in a pot and sauté onion, carrots, and celery until softened.
  3. Add garlic, thyme, oregano, and smoked paprika; cook for 30 seconds.
  4. Stir in cooked lentils and diced tomatoes, simmering for 10–15 minutes until thick and stew-like.
  5. Season with salt and pepper to taste.
  6. While stew simmers, boil potatoes in salted water until fork-tender; drain.
  7. Mash potatoes with milk, butter, and salt until smooth and creamy.
  8. Serve lentil stew generously spooned over mashed potatoes.

Notes

  • Green or brown lentils both work; red lentils can be used but may become softer.
  • For a thicker stew, mash a portion of the lentils into the pot during simmering.
  • Leftovers refrigerate well for up to 3 days; reheat gently on the stove.
  • To make vegan, use dairy-free butter and milk.
  • Adjust salt to taste, especially if using salted broth.
