- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, diced
- 1 celery stalk, diced

- 2½ cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 lb potatoes, peeled and cubed
- ½ cup milk or dairy-free milk
- 2 tbsp unsalted butter or olive oil
- Salt to taste
Instructions
- Bring lentils and vegetable broth to a boil, then reduce heat and simmer for 25–30 minutes until tender.
- Meanwhile, heat olive oil in a pot and sauté onion, carrots, and celery until softened.
- Add garlic, thyme, oregano, and smoked paprika; cook for 30 seconds.
- Stir in cooked lentils and diced tomatoes, simmering for 10–15 minutes until thick and stew-like.
- Season with salt and pepper to taste.
- While stew simmers, boil potatoes in salted water until fork-tender; drain.
- Mash potatoes with milk, butter, and salt until smooth and creamy.
- Serve lentil stew generously spooned over mashed potatoes.
Notes
- Green or brown lentils both work; red lentils can be used but may become softer.
- For a thicker stew, mash a portion of the lentils into the pot during simmering.
- Leftovers refrigerate well for up to 3 days; reheat gently on the stove.
- To make vegan, use dairy-free butter and milk.
- Adjust salt to taste, especially if using salted broth.
