Ingredients

- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- 1 tbsp fresh lemon zest
- 2 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ¼ tsp salt
- ½ cup powdered sugar, for coating
Instructions
- In a large bowl, cream butter and powdered sugar until light and fluffy.
- Mix in lemon zest, lemon juice, and vanilla extract until well combined.
- Gradually add flour and salt, mixing just until a soft dough forms.
- Roll dough into 1-inch balls and place on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 10–12 minutes, until cookies are set but not browned.
- Let cookies cool for 5 minutes, then gently roll in powdered sugar.
- Allow to cool completely for the perfect meltaway texture.
Notes
- Do not overbake; cookies should be pale and just set for a tender melt.
- Coat in powdered sugar while warm for best adhesion.
- Store in an airtight container at room temperature for up to 3 days.
