Description

Lemon Meltaways – buttery, soft cookies that melt in your mouth with bright lemon flavor and a delicate powdered sugar coating.


Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 tbsp fresh lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • ½ cup powdered sugar, for coating

Instructions

  1. In a large bowl, cream butter and powdered sugar until light and fluffy.
  2. Mix in lemon zest, lemon juice, and vanilla extract until well combined.
  3. Gradually add flour and salt, mixing just until a soft dough forms.
  4. Roll dough into 1-inch balls and place on a parchment-lined baking sheet.
  5. Bake at 350°F (175°C) for 10–12 minutes, until cookies are set but not browned.
  6. Let cookies cool for 5 minutes, then gently roll in powdered sugar.
  7. Allow to cool completely for the perfect meltaway texture.

Notes

  • Do not overbake; cookies should be pale and just set for a tender melt.
  • Coat in powdered sugar while warm for best adhesion.
  • Store in an airtight container at room temperature for up to 3 days.
