Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • ½ tsp red pepper flakes (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups fresh spinach, chopped
  • ¼ cup Parmesan cheese, grated
  • ¼ cup heavy cream (optional)
  • 2 tbsp unsalted butter
  • ¼ cup fresh parsley, chopped
  • ½ tsp paprika

Instructions

  • Cook orzo until al dente; drain and set aside.
  • Sauté shrimp in olive oil with salt, pepper, and paprika; set aside.
  • In the same skillet, melt butter and sauté garlic.
  • Add lemon zest, juice, red pepper flakes, and spinach; cook until wilted.
  • Mix in orzo, optional cream, and Parmesan.
  • Return shrimp to skillet, toss everything together, heat through.
  • Garnish with parsley and serve hot.
