- 1 cup orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice
- ½ tsp red pepper flakes (optional)
- ½ tsp salt
- ¼ tsp black pepper
- 2 cups fresh spinach, chopped
- ¼ cup Parmesan cheese, grated
- ¼ cup heavy cream (optional)
- 2 tbsp unsalted butter
- ¼ cup fresh parsley, chopped
- ½ tsp paprika
Instructions
- Cook orzo until al dente; drain and set aside.
- Sauté shrimp in olive oil with salt, pepper, and paprika; set aside.
- In the same skillet, melt butter and sauté garlic.
- Add lemon zest, juice, red pepper flakes, and spinach; cook until wilted.
- Mix in orzo, optional cream, and Parmesan.
- Return shrimp to skillet, toss everything together, heat through.
- Garnish with parsley and serve hot.

- Add more cream for a richer texture.
- Great with crusty bread or a side salad.
- Swap spinach with kale or arugula if desired.
