- 1 lb turkey or beef sausage, sliced into rounds
- 2 medium sweet potatoes, peeled and cubed
- 1 red onion, sliced
- 2 tbsp olive oil
- 2 tbsp honey
- 2 garlic cloves, minced
- 1 tbsp soy sauce (use tamari for gluten-free)
- ½ tsp smoked paprika
- Salt and pepper, to taste
- 1 tbsp chopped parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a small bowl, whisk together olive oil, honey, garlic, soy sauce, paprika, salt, and pepper.
- Add sausage, sweet potatoes, and red onion to a large mixing bowl. Pour the honey garlic mixture over and toss to coat evenly.
- Spread everything in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
- Garnish with chopped parsley and serve hot!
Notes
- Gluten-free when using tamari or a gluten-free soy sauce.
- Leftovers are great for lunches and store in the fridge for up to 3–4 days.
