Description

Honey BBQ Chicken Rice is a weeknight one-pan dinner dream: juicy chicken simmered in a rich honey BBQ sauce with fluffy, perfectly seasoned rice, all cooked in one pan.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 cup long-grain rice (uncooked)
  • 1½ cups chicken broth
  • ½ cup BBQ sauce
  • 2 tbsp honey
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • ½ cup corn kernels (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt, pepper, paprika, garlic powder, and onion powder. Cook until browned on all sides.
  2. Stir in rice and cook for 1–2 minutes to toast slightly.
  3. In a small bowl, whisk together chicken broth, BBQ sauce, and honey. Pour the mixture into the skillet.
  4. Stir to combine, bring to a simmer, then cover and cook on low heat for 18–20 minutes, or until rice is tender and liquid is absorbed.
  5. Remove from heat, fluff the rice, and stir in corn if using.
  6. Garnish with green onions and drizzle a little extra BBQ sauce on top before serving.
