Honey BBQ Chicken Rice is a weeknight one-pan dinner dream: juicy chicken simmered in a rich honey BBQ sauce with fluffy, perfectly seasoned rice, all cooked in one pan.

- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 cup long-grain rice (uncooked)
- 1½ cups chicken broth
- ½ cup BBQ sauce
- 2 tbsp honey
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
- ½ cup corn kernels (optional)
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt, pepper, paprika, garlic powder, and onion powder. Cook until browned on all sides.
- Stir in rice and cook for 1–2 minutes to toast slightly.
- In a small bowl, whisk together chicken broth, BBQ sauce, and honey. Pour the mixture into the skillet.
- Stir to combine, bring to a simmer, then cover and cook on low heat for 18–20 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat, fluff the rice, and stir in corn if using.
- Garnish with green onions and drizzle a little extra BBQ sauce on top before serving.

- You can use chicken thighs or breasts depending on preference.
- For even quicker prep, use precooked rice or a microwaveable rice option.
- Leftovers store in an airtight container for up to 3–4 days.
