Homemade Healthy Almond Joys are no-bake treats featuring creamy coconut, rich chocolate, and crunchy almonds, a healthier gluten-free option.
Ingredients

- 2 cups unsweetened shredded coconut
- ¼ cup coconut oil, melted
- 3 tbsp honey or maple syrup
- ½ tsp vanilla extract
- 18 whole almonds
- 1 cup dark chocolate chips
Instructions
- In a bowl, mix shredded coconut, melted coconut oil, honey or maple syrup, and vanilla until combined.
- Line a baking sheet with parchment paper.
- Scoop and shape mixture into small oval bars using your hands.
- Press one whole almond on top of each.
- Freeze for 30–45 minutes until firm.
- Melt dark chocolate in 20-second intervals, stirring until smooth.
- Dip each coconut bar into melted chocolate or spoon chocolate over the top.
- Return to freezer for at least 1½ hours until fully set.
- Store in the refrigerator or freezer.
