Hobo Casserole Ground Beef: a warm, hearty, comforting dish built on pantry staples—ground beef, potatoes, and a creamy mushroom sauce, finished with melted cheese for a cozy, no-fuss dinner.
Ingredients
Scale
- 1 lb ground beef
- 1 small onion, diced
- 3 cups thinly sliced potatoes
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
- Chopped parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a skillet, heat olive oil over medium heat. Cook ground beef and diced onion until browned. Season with garlic powder, onion powder, paprika, salt, and pepper. Drain excess fat.
- Layer half the sliced potatoes on the bottom of the baking dish.
- Spread the cooked ground beef mixture evenly over the potatoes.
- Add the remaining potatoes on top of the beef layer.
- In a bowl, mix cream of mushroom soup and milk until smooth. Pour evenly over the casserole.
- Cover the dish with foil and bake for 50 minutes.
- Remove foil, sprinkle cheddar cheese over the top, and bake for an additional 10–15 minutes until the cheese is melted and bubbly and potatoes are tender.
- Let cool slightly, garnish with parsley, and serve warm.
Notes
- Tip: Slice potatoes evenly for uniform cooking.
- For a quicker version, use pre-sliced potatoes or frozen hash browns.
- Let the casserole rest for 5–10 minutes before serving to help it set and slice nicer.
