Ingredients

- 2 tbsp olive oil
- 2 large onions, thinly sliced
- 2 cups cottage cheese
- 1 cup shredded Gruyère cheese
- 3 large eggs
- ½ tsp garlic powder
- ½ tsp dried thyme
- Salt and black pepper, to taste
- Olive oil spray or light grease for baking dish
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat and cook onions for 15–20 minutes until soft and lightly caramelized.
- In a bowl, whisk eggs, then stir in cottage cheese, Gruyère, garlic powder, thyme, salt, and pepper.
- Fold caramelized onions into the mixture.
- Pour into prepared baking dish and spread evenly.
- Bake uncovered for 30–35 minutes until set and lightly golden on top.
- Let rest for 5 minutes before slicing and serving.
Notes
- You can substitute other melting cheeses if Gruyère isn’t available.
- Caramelizing the onions brings deeper sweetness and flavor.
- Let the bake rest for a few minutes before slicing to help it set.
