- 1½ cups oat flour
- 1 cup cottage cheese
- 2 large eggs
- ¼ cup honey or maple syrup
- 2 tbsp melted coconut oil or butter
- 1 tsp vanilla extract
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 3 tbsp coconut sugar or brown sugar
- 1½ tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- Blend cottage cheese until smooth.
- In a bowl, whisk blended cottage cheese, eggs, honey, oil, and vanilla.
- Stir in oat flour, baking powder, baking soda, and salt until just combined.
- Mix cinnamon swirl ingredients in a small bowl.
- Pour half the batter into the loaf pan, sprinkle half the cinnamon mixture, repeat layers, then swirl gently with a knife.
- Bake for 40–45 minutes, until a toothpick comes out mostly clean.
- Cool before slicing.
Notes
- Blend cottage cheese until smooth for a moister batter.
- This loaf yields 10 slices; slice after cooling.
- For a touch more sweetness, drizzle honey or maple syrup when serving.
