Description

Ingredients

  • 1½ cups oat flour
  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup honey or maple syrup
  • 2 tbsp melted coconut oil or butter
  • 1 tsp vanilla extract
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 tbsp coconut sugar or brown sugar
  • 1½ tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Blend cottage cheese until smooth.
  3. In a bowl, whisk blended cottage cheese, eggs, honey, oil, and vanilla.
  4. Stir in oat flour, baking powder, baking soda, and salt until just combined.
  5. Mix cinnamon swirl ingredients in a small bowl.
  6. Pour half the batter into the loaf pan, sprinkle half the cinnamon mixture, repeat layers, then swirl gently with a knife.
  7. Bake for 40–45 minutes, until a toothpick comes out mostly clean.
  8. Cool before slicing.
