Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix cottage cheese, egg, and olive oil until mostly smooth.
- Add flour, baking powder, and salt. Stir until a soft dough forms.
- Fold in shredded mozzarella gently.
- Scoop small portions of dough and roll into bite-sized balls.
- Place on the baking sheet and sprinkle with desired toppings.
- Bake for 10 minutes until puffed and lightly golden.

Notes
