High Fiber Lebanese Lemon Lentil Soup – A warm, tangy, plant-based Lebanese soup packed with fiber-rich lentils, bright lemon, and fragrant spices for comforting meals.
Ingredients

- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup dried red or yellow lentils, rinsed
- 1 tsp ground cumin
- ½ tsp turmeric
- ½ tsp salt
- ¼ tsp black pepper
- 6 cups vegetable broth or water
- Juice of 2 lemons (adjust to taste)
- Optional garnish: chopped parsley or cilantro
Instructions
- Heat olive oil in a pot over medium heat. Add onion and sauté until soft and translucent.
- Stir in garlic, cumin, turmeric, salt, and black pepper. Cook for 30 seconds until fragrant.
- Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25–30 minutes until lentils are very tender.
- Use an immersion blender to partially or fully blend the soup to your desired consistency.
- Stir in fresh lemon juice and adjust seasoning to taste.
- Serve warm with fresh herbs on top if desired.
Notes
- You can adjust the lemon juice to taste for brightness.
- Garnish with chopped parsley or cilantro for color and aroma.
- Store leftovers in the refrigerator for 3-4 days or freeze for longer storage.
