- 2 large sweet potatoes, peeled and grated
- 1 small onion, finely grated
- 1 large egg
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ¼ tsp garlic powder
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place grated sweet potatoes and onion in a clean towel and squeeze out excess moisture.
- Transfer to a bowl and add egg, olive oil, salt, pepper, paprika, and garlic powder. Mix well.
- Scoop mixture into small mounds on the baking sheet and flatten slightly.
- Bake for 18 minutes, then flip and bake another 12–15 minutes until golden and crispy.
- Let cool slightly before serving.
Notes
- For best crispiness, squeeze out as much moisture as possible from the grated potatoes and onion.
- Do not overcrowd the pan; leave space between mounds for even browning.
- These hash browns pair nicely with a dollop of yogurt or salsa.
