Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup mushrooms (cremini or button), finely chopped
  • 2 cloves garlic, minced
  • 1/2 small onion, finely diced
  • 1/2 tbsp olive oil (for mushrooms)
  • 1/2 tsp dried thyme or Italian seasoning
  • 1/2 cup reduced-fat cream cheese, softened
  • 1/3 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Toothpicks or kitchen twine to secure

Instructions

  • Preheat oven to 375°F (190°C).
  • Sauté mushrooms, onion, and garlic until tender; mix with cream cheese, mozzarella, Parmesan, and seasoning.
  • Slice chicken breasts to create pockets.
  • Fill each with the mushroom-cheese mixture and secure.
  • Rub chicken with oil and seasoning.
  • Bake for 25–30 minutes until cooked through and golden.

Notes

  • Use toothpicks or kitchen twine to secure stuffing.
  • Swap mushrooms for spinach or sun-dried tomatoes for variation.
