- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup mushrooms (cremini or button), finely chopped
- 2 cloves garlic, minced
- 1/2 small onion, finely diced
- 1/2 tbsp olive oil (for mushrooms)
- 1/2 tsp dried thyme or Italian seasoning
- 1/2 cup reduced-fat cream cheese, softened
- 1/3 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Toothpicks or kitchen twine to secure
Instructions
- Preheat oven to 375°F (190°C).
- Sauté mushrooms, onion, and garlic until tender; mix with cream cheese, mozzarella, Parmesan, and seasoning.
- Slice chicken breasts to create pockets.
- Fill each with the mushroom-cheese mixture and secure.
- Rub chicken with oil and seasoning.
- Bake for 25–30 minutes until cooked through and golden.

- Use toothpicks or kitchen twine to secure stuffing.
- Swap mushrooms for spinach or sun-dried tomatoes for variation.
- Store leftovers in the fridge for up to 3 days.
