- 2 ripe bananas, mashed
- 1 cup plain Greek yogurt
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour or whole wheat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
- Optional: chopped walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, mix mashed bananas, Greek yogurt, eggs, maple syrup or honey, and vanilla until smooth.
- Add flour, baking powder, baking soda, cinnamon, and salt. Stir until just combined.
- Fold in optional walnuts or chocolate chips if using.
- Divide batter evenly among muffin cups.
- Bake for 18–22 minutes until a toothpick inserted comes out clean.
- Let cool slightly before serving.
Notes
- Using whole wheat flour will yield denser muffins and more fiber.
- For a dairy-free option, use dairy-free yogurt and maple syrup instead of honey.
- Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
- To reduce sugar, you can use a smaller amount of maple syrup and rely more on the bananas for sweetness.
