- 2 ripe bananas, mashed
- 1 cup rolled oats
- ¼ cup peanut butter
- 1 tsp vanilla extract
- Optional add-ins: 2 tbsp chopped nuts, dark chocolate chips, or raisins
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mash the bananas until smooth. Add peanut butter and vanilla extract, then stir to combine.
- Mix in rolled oats until a thick batter forms. Fold in any optional add-ins if desired.
- Scoop spoonfuls of dough onto the baking sheet and flatten slightly with the back of a spoon.
- Bake for 12–15 minutes, or until golden and set.
- Cool completely before enjoying these naturally sweet, nourishing cookies!
