- 1 lb boneless skinless chicken breast, cubed
- 2 medium sweet potatoes, peeled and diced
- 2 tbsp olive oil
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 2 cups cooked rice (white or brown)
- Optional: chopped parsley, avocado slices, or lemon wedges
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Roast for 25–30 minutes until tender and lightly caramelized.
- Heat remaining olive oil in a skillet over medium heat. Add chicken, garlic powder, salt, and pepper. Cook until golden and fully cooked through.
- Divide cooked rice into bowls.
- Top with roasted sweet potatoes and chicken.
- Add optional toppings if desired and serve warm.

- You can use brown rice for extra fiber.
