Ingredients

  • 1 lb boneless skinless chicken breast, cubed
  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups cooked rice (white or brown)
  • Optional: chopped parsley, avocado slices, or lemon wedges

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Roast for 25–30 minutes until tender and lightly caramelized.
  3. Heat remaining olive oil in a skillet over medium heat. Add chicken, garlic powder, salt, and pepper. Cook until golden and fully cooked through.
  4. Divide cooked rice into bowls.
  5. Top with roasted sweet potatoes and chicken.
  6. Add optional toppings if desired and serve warm.
