Description
Healthy Broccoli Cheddar Soup: Creamy, easy, and comforting without the guilt; this version is packed with vegetables and protein for four servings while delivering the cheesy flavor you love.

- 2 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups broccoli florets
- 1 medium carrot, shredded
- 3 cups chicken or vegetable broth
- 1 cup milk
- 1/2 cup plain Greek yogurt
- 1 1/2 cups shredded sharp cheddar cheese (halal-certified)
- 1/2 tsp paprika
- 1/2 tsp mustard powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic and cook 2–3 minutes until softened.
- Add broccoli, shredded carrot, broth, paprika, mustard powder, salt, and pepper. Bring to a simmer.
- Cook 12–15 minutes until broccoli is very tender.
- Use an immersion blender to blend until smooth, or blend carefully in batches.
- Reduce heat to low and stir in milk and Greek yogurt until creamy.
- Add shredded cheddar cheese and stir until melted and smooth.
- Taste and adjust seasoning as needed. Serve warm.
Notes
- For a lighter version, use low-fat milk and yogurt.
- Use vegetable broth to keep this vegetarian; this also makes it Halal-friendly if using halal-certified ingredients.
- If you prefer a chunkier texture, reserve a cup of broccoli florets and fold them in after blending.
- Leftovers refrigerate well; reheat gently on the stove.
