- 2 ripe bananas, mashed
- 2 large eggs
- ¼ cup honey or maple syrup
- ¼ cup melted coconut oil or butter
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp baking powder
- ¼ tsp salt
- Optional add-ins: dark chocolate chips, chopped nuts, or raisins
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix mashed bananas, eggs, honey, melted oil, and vanilla.
- Stir in oats, cinnamon, baking powder, and salt until combined.
- Fold in optional add-ins if desired.
- Spread mixture evenly into prepared pan.
- Bake for 25–30 minutes until set and lightly golden.
- Cool completely before slicing into bars.
Notes
- Gluten-free option is achieved by using gluten-free oats.
- For a vegan version, replace eggs with flax eggs or a commercial egg substitute.
