Hashbrown Sausage Bites are crispy, savory breakfast bites packed with hashbrowns, halal sausage, and cheddar, baked until golden.

- 2 cups frozen shredded hashbrowns, thawed and excess moisture squeezed out
- 1 cup cooked halal breakfast sausage (chicken or beef), finely crumbled
- 1 cup shredded cheddar cheese
- 2 large eggs
- ¼ cup finely chopped onion
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and black pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a mini muffin pan.
- In a large bowl, combine hashbrowns, cooked sausage, cheddar cheese, onion, garlic powder, paprika, salt, and pepper.
- Add eggs and mix until everything is well combined.
- Spoon the mixture evenly into the prepared muffin cups, pressing gently.
- Bake for 18–22 minutes, or until golden brown and set.
- Let cool slightly before removing. Serve warm.
Notes
- Be sure to squeeze excess moisture from the hashbrowns for crispier bites.
- You can use chicken or beef halal sausage; crumble well for even distribution.
- Leftovers refrigerate well and reheat in the oven or microwave.
- For a spicy kick, add a pinch of cayenne to the mixture.
