Ingredients

Instructions

  1. Preheat oven to 400°F and pierce sweet potatoes with a fork.
  2. Roast sweet potatoes for 40–45 minutes until tender.
  3. In a skillet, warm shredded chicken with green chiles, roasted corn, cumin, paprika, salt, and pepper.
  4. Blend cottage cheese with lime juice and water until smooth and pourable.
  5. Slice sweet potatoes open and fluff the inside with a fork.
  6. Fill each potato with the warm chicken mixture.
  7. Drizzle the lime cottage sauce on top.
  8. Garnish with chopped cilantro.
  9. Serve hot with lime wedges.
