- 1 cup uncooked rice
- 2 cups water or chicken broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup sliced red onion
- 1/4 cup crumbled feta cheese
- Tzatziki Sauce: 1 cup plain Greek yogurt
- 1/2 cucumber, grated and squeezed dry
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt, to taste
Instructions
- Cook rice according to package instructions using water or chicken broth. Set aside.
- In a bowl, toss chicken with olive oil, oregano, paprika, garlic powder, onion powder, salt, and pepper.
- Heat a skillet over medium heat and cook chicken until golden and fully cooked, about 6-8 minutes.
- In a separate bowl, mix all tzatziki sauce ingredients until smooth. Chill until ready to use.
- Prepare vegetables by chopping tomatoes, cucumber, and red onion.
- Assemble bowls with rice, Greek chicken, fresh veggies, feta cheese, and a generous spoon of tzatziki sauce.
- Serve immediately or store in containers for meal prep.
