Ingredients

  • 1.5 lb boneless skinless chicken breast, cubed
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 1 cup uncooked rice
  • 2 cups water or chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • Tzatziki Sauce: 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt, to taste

Instructions

  1. Cook rice according to package instructions using water or chicken broth. Set aside.
  2. In a bowl, toss chicken with olive oil, oregano, paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat a skillet over medium heat and cook chicken until golden and fully cooked, about 6-8 minutes.
  4. In a separate bowl, mix all tzatziki sauce ingredients until smooth. Chill until ready to use.
  5. Prepare vegetables by chopping tomatoes, cucumber, and red onion.
  6. Assemble bowls with rice, Greek chicken, fresh veggies, feta cheese, and a generous spoon of tzatziki sauce.
