- 1 lb ground turkey or halal ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp crushed red pepper flakes (optional)
- 24 oz gluten-free marinara sauce
- 4 cups low-sodium chicken or vegetable broth
- 8 oz gluten-free lasagna noodles, broken into pieces
- Salt and pepper to taste
- For topping (optional but recommended):
- Dairy-free ricotta or vegan cheese
- Fresh basil or parsley
Instructions
- Heat olive oil in a large pot over medium heat. Add ground meat and cook until browned, breaking it apart as it cooks.
- Add onion and garlic; sauté for 3–4 minutes until softened.
- Stir in oregano, basil, and red pepper flakes. Cook for another minute to release the flavors.
- Pour in marinara sauce and broth. Bring to a boil.
- Add broken lasagna noodles and stir well. Reduce heat to a simmer.
- Cook uncovered for 10–12 minutes, stirring occasionally, until noodles are tender.
- Season with salt and pepper to taste.
- Serve hot, topped with dairy-free ricotta or vegan cheese and fresh herbs if desired.
