  • 1½ tsp instant coffee or espresso powder
  • 2 tsp agar-agar powder
  • ¼ cup water
  • For the glaze or shell (optional): 1½ cups chocolate chips
  • For the glaze or shell (optional): 1 tbsp coconut oil

Instructions

  1. In a small saucepan, whisk agar-agar with water. Bring to a gentle boil and simmer 2 minutes until fully dissolved. Set aside to cool slightly.
  2. Beat cream cheese, powdered sugar, vanilla, spices, and coffee powder until smooth.
  3. Slowly mix in the warm agar mixture until fully incorporated.
  4. In a separate bowl, whip heavy cream to soft peaks.
  5. Gently fold whipped cream into the gingerbread mixture until light and airy.
  6. Spoon mousse into silicone dome molds, smoothing the tops.
  7. Refrigerate for at least 6 hours until fully set.
  8. Melt chocolate with coconut oil and pour over unmolded domes for a glossy finish, if desired.
  9. Chill 10–15 minutes until the coating sets before serving.
