Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • ½ tsp turmeric
  • ½ tsp paprika
  • ¼ tsp cayenne pepper, optional
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup cooked lentils or canned lentils, drained
  • 2 cups vegetable broth
  • 1 cup canned coconut milk
  • 2 cups chopped kale
  • ½ tsp salt, adjust to taste
  • ½ tsp black pepper
  • 1 tbsp lemon or lime juice
  • Optional garnish: fresh cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 3–4 minutes.
  3. Stir in garlic, ginger, curry powder, cumin, turmeric, paprika, and cayenne if using. Cook 30 seconds until fragrant.
  4. Add sweet potatoes, lentils, and vegetable broth. Stir well and bring to a gentle boil.
  5. Reduce heat, cover, and simmer for 12–15 minutes until sweet potatoes are tender.
  6. Stir in coconut milk, kale, salt, and black pepper. Simmer uncovered for 3–5 minutes until kale is wilted and stew is creamy.
  7. Finish with lemon or lime juice and garnish before serving if desired.

  • This dish is naturally dairy-free and dairy-free due to coconut milk.
  • Adjust cayenne to taste or omit for a milder stew.
