Moist and flavorful Garlic Parmesan Chicken Meatloaf made with ground chicken, herbs, breadcrumbs, and cheese—perfect for a healthy dinner!
Ingredients
- 1 ½ lbs ground chicken
- ¾ cup seasoned breadcrumbs
- ½ cup grated Parmesan cheese
- 2 large eggs
- 4 cloves garlic, minced
- ½ yellow onion, finely chopped
- ¼ cup milk
- 2 tbsp fresh parsley, chopped
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup shredded mozzarella cheese (optional, for topping)
- 1 tbsp olive oil (for brushing)
Instructions
Preheat oven to 375°F. Mix all ingredients in a large bowl. Form into a loaf and place on a lined baking sheet. Brush with olive oil and bake for 45–50 minutes until golden and cooked through. Add mozzarella in the last 10 minutes if using. Rest, slice, and serve.
Notes
For extra flavor, sauté onion and garlic before mixing. Mozzarella topping is optional but adds cheesy goodness. Leftovers store well for up to 3 days in the fridge.
