Description

Easy one-pan garlic Parmesan chicken and potatoes with tender chicken, crispy potatoes, and flavorful herbs. Perfect quick dinner!


Ingredients

4 boneless, skinless chicken thighs (or breasts if preferred)
1 ½ lbs baby potatoes, halved
3 tablespoons olive oil
4 garlic cloves, minced
½ teaspoon paprika
1 teaspoon Italian seasoning
Salt and black pepper, to taste
1 cup grated Parmesan cheese, divided
2 tablespoons unsalted butter, melted
1 tablespoon chopped fresh parsley (optional)

Instructions

Preheat oven to 400°F. Toss potatoes with olive oil, garlic, paprika, Italian seasoning, salt, pepper, and half the Parmesan. Arrange on baking sheet. Coat chicken with olive oil, butter, garlic, seasoning, salt, and pepper. Place beside potatoes. Sprinkle remaining Parmesan. Bake 35–40 mins until chicken is cooked and potatoes are tender. Garnish with parsley.

Notes

Use chicken breasts if preferred. Broil last 2-3 minutes for extra crispiness. Add veggies for variation. Store leftovers refrigerated up to 4 days or freeze up to 2 months.
