Juicy garlic herb chicken served with buttery mashed potatoes and sweet glazed carrots for the perfect comfort dinner.
Ingredients
4 boneless skinless chicken breasts
3 tbsp olive oil
4 cloves garlic, minced
2 tsp thyme, chopped
2 tsp rosemary, chopped
1 tsp paprika
2 tbsp butter
2 lbs russet potatoes, peeled & cubed
4 tbsp butter (for potatoes)
1/2 cup warm milk
1 lb carrots, sliced
2 tbsp butter (for carrots)
2 tbsp honey
1 tbsp parsley, chopped
Salt & pepper to taste
Instructions
Season and sear chicken with garlic and herbs, then bake until cooked through. Boil and mash potatoes with butter and milk. Steam carrots, glaze with butter and honey, then toss with parsley. Serve together warm.
Notes
Use a meat thermometer to keep chicken juicy. Warm milk makes fluffier potatoes. Don’t overcook carrots; they should stay tender-crisp.
