Description

Ingredients

  • 8 slices thick-cut bread (Texas toast or artisan white)
  • ½ cup unsalted butter, softened
  • 23 cloves garlic, minced
  • 1 tsp dried Italian herbs (parsley, oregano, basil mix)
  • ½ tsp red pepper flakes (optional)
  • 2 boneless, skinless chicken breasts
  • Olive oil (for brushing)
  • Salt and freshly cracked black pepper
  • 12 large ripe tomatoes, sliced
  • Romaine or green leaf lettuce, washed and dried
  • Mayonnaise

Instructions

  1. In a small bowl, combine the softened butter, minced garlic, Italian herbs, and red pepper flakes (if using). Mix thoroughly and set aside.
  2. Preheat your grill or grill pan to medium-high. Brush chicken breasts with olive oil and season with salt and pepper. Grill for 5–6 minutes on each side, or until internal temp reaches 165°F. Let rest 5 minutes, then slice thinly.
  3. Spread garlic butter on one side of each bread slice. Toast buttered sides down in a skillet over medium heat until golden and crisp, about 2–3 minutes per slice.
  4. Spread a thin layer of mayo on the unbuttered side of each slice. On 4 slices, layer with lettuce, tomato, grilled chicken, and optional toppings.
  5. Top with remaining toasted bread slices, press gently, and serve warm.
