Ingredients

  • 4 cloves garlic, minced

  • 1 tbsp olive oil
  • 1 tbsp chopped parsley (for garnish)
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 tbsp butter
  • 1 small jalapeño, finely diced (seeds removed for less heat)
  • ½ tsp garlic powder
  • ½ cup shredded sharp cheddar cheese
  • Salt and pepper, to taste

Instructions

Cook rice in chicken broth with jalapeño and garlic powder. Sauté chicken in butter and olive oil with garlic and spices until cooked. Stir cheddar cheese into rice. Serve chicken over cheesy jalapeño rice and garnish with parsley.

Notes

Remove jalapeño seeds to control heat. Use chicken thighs for juicier texture or breasts for leaner option. Adjust cheese and spice levels to taste.
