Ingredients

  • 2 lb halal beef short ribs
  • 2 tbsp olive oil
  • 4 large yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 2 tbsp butter
  • 1 tbsp flour
  • 8 cups beef broth
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • ½ tbsp soy sauce or Worcestershire sauce (halal)
  • 6 slices crusty bread
  • 1½ cups shredded Gruyère or mozzarella cheese (halal-certified)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season the short ribs with salt and pepper, then sear on all sides until browned. Remove and set aside.
  2. In the same pot, melt the butter. Add sliced onions and cook slowly for 25–30 minutes until deeply caramelized, stirring occasionally.
  3. Stir in garlic and cook 1 minute. Add flour and cook another minute to thicken.
  4. Return the short ribs to the pot. Pour in beef broth, thyme, bay leaf, and halal soy/Worcestershire sauce. Bring to a simmer.
  5. Reduce heat, cover, and cook for 2 hours until the ribs are tender and the flavor is rich.
  6. Remove the ribs, shred the meat, and discard the bones. Return the meat to the soup and adjust seasoning.
  7. Ladle soup into oven-safe bowls. Top each with a slice of crusty bread and a generous layer of cheese.
  8. Broil for 2–3 minutes until the cheese is melted and bubbly.
