Instructions
- Add cottage cheese, eggs, oats, banana, baking powder, vanilla, and salt to a blender. Blend until smooth.
- Heat a non-stick skillet over medium heat and lightly grease with oil or cooking spray.
- Pour 2–3 tablespoons of batter per pancake into the pan.
- Cook for 2–3 minutes until bubbles form and edges look set. Flip and cook another 1–2 minutes.
- Serve warm with fresh fruit, honey, or your favorite toppings.

- The batter thickens as it rests; if too thick, blend briefly again or add a splash of milk of choice.
