- 2 cups canned chickpeas, rinsed and drained
- ¼ cup all-purpose flour or chickpea flour
- 1 large egg
- 2 tbsp olive oil, plus more for cooking
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh cilantro, finely chopped
- 1 clove garlic, minced
- ½ tsp ground cumin
- ½ tsp paprika
- ¼ tsp black pepper
- ½ tsp salt
- 1 tbsp lemon juice
Instructions
- Place chickpeas in a bowl and mash with a fork, leaving some texture.
- Add flour, egg, olive oil, parsley, cilantro, garlic, cumin, paprika, pepper, salt, and lemon juice.
- Mix until everything is well combined and holds together.
- Heat a skillet over medium heat with a light layer of olive oil.
- Scoop small portions of the mixture and flatten gently into patties.
- Cook for 3–4 minutes per side until golden and crispy.
- Transfer to a paper towel-lined plate and serve warm.
Notes
- Make-ahead: refrigerate the mixture for 30 minutes to help it shape.
- For gluten-free option, use chickpea flour or a gluten-free flour blend.
- Serve with yogurt-lemon sauce or tahini for dipping.
- To reduce oil, bake the patties at 425°F (220°C) for 12–15 minutes, flipping once.
- Want more heat? Add a pinch of red pepper flakes.
