Description

Flavorful Chickpea Fritters: Crispy on the outside and tender on the inside, these fritters are packed with fresh herbs, warm spices, and a touch of garlic.


Ingredients

  • 2 cups canned chickpeas, rinsed and drained
  • ¼ cup all-purpose flour or chickpea flour
  • 1 large egg
  • 2 tbsp olive oil, plus more for cooking
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh cilantro, finely chopped
  • 1 clove garlic, minced
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ¼ tsp black pepper
  • ½ tsp salt
  • 1 tbsp lemon juice

Instructions

  1. Place chickpeas in a bowl and mash with a fork, leaving some texture.
  2. Add flour, egg, olive oil, parsley, cilantro, garlic, cumin, paprika, pepper, salt, and lemon juice.
  3. Mix until everything is well combined and holds together.
  4. Heat a skillet over medium heat with a light layer of olive oil.
  5. Scoop small portions of the mixture and flatten gently into patties.
  6. Cook for 3–4 minutes per side until golden and crispy.
  7. Transfer to a paper towel-lined plate and serve warm.

Notes

  • Make-ahead: refrigerate the mixture for 30 minutes to help it shape.
  • For gluten-free option, use chickpea flour or a gluten-free flour blend.
  • Serve with yogurt-lemon sauce or tahini for dipping.
  • To reduce oil, bake the patties at 425°F (220°C) for 12–15 minutes, flipping once.
  • Want more heat? Add a pinch of red pepper flakes.
