- 2 cups rolled oats (certified gluten-free if needed)
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp baking powder
- ¼ tsp salt
- ¼ cup mini chocolate chips or chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
- In a bowl, mix mashed bananas, honey, and vanilla.
- Add oats, cinnamon, baking powder, and salt. Stir to combine.
- Fold in chocolate chips or nuts if using.
- Spread mixture evenly into the pan.
- Bake for 25–30 minutes until set and lightly golden.
- Cool completely before slicing into bars.
Notes
- GF option: Use certified gluten-free oats.
- Honey can be substituted with maple syrup for a vegan option, which will slightly affect flavor.
- Chocolate chips or chopped nuts are optional; try walnuts, pecans, or dark chocolate chunks.
