Ingredients

  • 1 medium zucchini, grated (about 1 cup after squeezing water)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp cream cheese, softened
  • 1 large egg
  • ¾ cup almond flour
  • 1 tsp baking powder
  • ½ tsp garlic powder (optional)
  • ½ tsp onion powder (optional)
  • ¼ tsp salt (adjust to taste)
  • 1 tbsp Everything Bagel Seasoning (or sesame seeds, poppy seeds)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Grate zucchini, mix with salt, let sit 10 minutes, then squeeze out moisture.
  3. In a bowl combine zucchini, mozzarella, cream cheese, egg, almond flour, baking powder, garlic powder, onion powder, and salt.
