Description

Easy Shepherd’s Pie Casserole: a creamy, comforting layered dish with seasoned ground meat, vegetables, and fluffy mashed potatoes, baked to golden perfection.


Ingredients

  • 1 lb ground beef or ground lamb
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 4 cups mashed potatoes (fresh or leftover)
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large skillet, add onion and garlic, and cook until softened.
  3. Add ground beef or lamb and cook until browned, breaking it apart as it cooks.
  4. Stir in tomato paste, paprika, thyme, parsley, salt, and pepper.
  5. Add frozen vegetables and beef broth; simmer 5–7 minutes until slightly thickened.
  6. Transfer the meat mixture to a baking dish and spread evenly.
  7. Spoon mashed potatoes on top, smoothing the surface.
  8. Sprinkle cheddar cheese if using.
  9. Bake 20–25 minutes until golden on top and bubbling around the edges.
  10. Let cool slightly before serving.

  • You can use leftover mashed potatoes to save time.
  • For gluten-free option, ensure your beef broth is gluten-free.
  • To make it vegetarian, substitute lentils or mushrooms and use dairy-free mashed potatoes.
