- 1 lb ground beef or ground lamb
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- 4 cups mashed potatoes (fresh or leftover)
- ½ cup shredded cheddar cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large skillet, add onion and garlic, and cook until softened.
- Add ground beef or lamb and cook until browned, breaking it apart as it cooks.
- Stir in tomato paste, paprika, thyme, parsley, salt, and pepper.
- Add frozen vegetables and beef broth; simmer 5–7 minutes until slightly thickened.
- Transfer the meat mixture to a baking dish and spread evenly.
- Spoon mashed potatoes on top, smoothing the surface.
- Sprinkle cheddar cheese if using.
- Bake 20–25 minutes until golden on top and bubbling around the edges.
- Let cool slightly before serving.
Notes
- You can use leftover mashed potatoes to save time.
- For gluten-free option, ensure your beef broth is gluten-free.
- To make it vegetarian, substitute lentils or mushrooms and use dairy-free mashed potatoes.
- Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
