Easy Rotisserie Chicken Gnocchi Soup: warm, creamy, and quick comfort soup made with rotisserie chicken and pillowy gnocchi.

- 2 tbsp olive oil
- 1 small onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 1 cup water
- 1 cup milk or half-and-half
- 2 cups cooked rotisserie chicken, shredded
- 1 (16 oz) package potato gnocchi
- 1½ cups baby spinach
- 1 tsp dried thyme
- Salt and pepper to taste
- Optional: red pepper flakes or fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery until softened, about 5–6 minutes.
- Add garlic and thyme; cook for 1 more minute until fragrant.
- Pour in chicken broth and water. Bring to a gentle boil.
- Stir in the shredded chicken and gnocchi. Simmer for 5–7 minutes until the gnocchi floats and is tender.
- Reduce heat and stir in milk or half-and-half, then add baby spinach. Simmer for another 2–3 minutes until spinach wilts.
- Season with salt, pepper, and optional red pepper flakes.
- Ladle into bowls and top with parsley if desired.
Notes
- You can use leftovers from a rotisserie chicken for convenience.
- If the gnocchi becomes too soft, simmer slightly less or adjust heat.
- Use low-sodium broth to control saltiness.
- Garnish with fresh parsley for color and extra flavor.
