Easy Parmesan Chicken Pasta: creamy, comforting slow-cooker dish featuring tender chicken and garlic parmesan pasta.

- 1½ lb boneless skinless chicken breasts
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 cups chicken broth
- 1 cup heavy cream
- ¾ cup grated parmesan cheese
- 8 oz pasta of choice
- 2 tbsp cornstarch
- 2 tbsp water
- Optional: chopped parsley for garnish
Instructions
- Place chicken breasts in the crockpot and season with salt, pepper, garlic powder, and Italian seasoning.
- Pour chicken broth over the chicken.
- Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender.
- Remove chicken, shred it, and return it to the crockpot.
- Stir in heavy cream and parmesan cheese.
- Mix cornstarch with water and add to the crockpot to thicken the sauce.
- Cook pasta separately according to package directions; drain.
- Stir cooked pasta into the crockpot until fully coated in sauce.
- Let sit for 10 minutes before serving. Garnish if desired.
Notes
- For a thicker sauce, increase the cornstarch slurry and cook a few minutes longer.
- Use gluten-free pasta if you need this to be gluten-free.
- Leftovers refrigerate well for 3–4 days.
- Garnish with chopped parsley for color, if desired.
