Description

Easy Orange Pancakes – Soft, fluffy pancakes bursting with fresh citrus and ricotta, a bright breakfast twist with orange zest and juice.


Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • ¾ cup ricotta cheese
  • ½ cup milk
  • 1 large egg
  • Zest of 1 orange
  • ¼ cup fresh orange juice
  • 1 tsp vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix ricotta cheese, milk, egg, orange zest, orange juice, and vanilla until smooth.
  3. Add wet ingredients to dry ingredients and stir gently until just combined.
  4. Heat a nonstick skillet over medium heat and lightly grease.
  5. Pour batter onto the skillet and cook until bubbles form on the surface.
  6. Flip and cook until golden and cooked through.
  7. Serve warm with syrup, powdered sugar, or fresh orange slices.

Notes

  • For lighter pancakes, let the batter rest 5–10 minutes before cooking.
