- ¾ cup ricotta cheese
- ½ cup milk
- 1 large egg
- Zest of 1 orange

- 1 tsp vanilla extract

Instructions
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix ricotta cheese, milk, egg, orange zest, orange juice, and vanilla until smooth.
- Add wet ingredients to dry ingredients and stir gently until just combined.
- Heat a nonstick skillet over medium heat and lightly grease.
- Pour batter onto the skillet and cook until bubbles form on the surface.
- Flip and cook until golden and cooked through.
- Serve warm with syrup, powdered sugar, or fresh orange slices.
Notes
- For lighter pancakes, let the batter rest 5–10 minutes before cooking.
- You can substitute ricotta with cottage cheese blended until smooth.
- Increase orange zest for a stronger citrus flavor.
- Keep warm in a low oven (200°F/93°C) while cooking the remaining batter.
