Ingredients

  • 1 (12 oz) can evaporated milk
  • 3 large eggs
  • 1 cup brown sugar, packed
  • 2 teaspoons pumpkin pie spice
  • 1 box (15.25 oz) yellow or spice cake mix
  • 1 cup chopped pecans (optional)
  • 1 cup (2 sticks) unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch pan.
  2. In a large bowl, whisk together pumpkin puree, evaporated milk, eggs, brown sugar, and pumpkin pie spice until fully combined.
  3. Pour the pumpkin mixture into the prepared pan and spread evenly.
  4. Sprinkle the dry cake mix evenly over the top (do not mix it in).
  5. Top with chopped pecans if using.
  6. Drizzle melted butter evenly over the entire surface.
  7. Bake for 45–50 minutes, until golden brown and mostly set in the center.
  8. Let cool for at least 1 hour before serving to allow the layers to firm up.
  9. Serve warm or room temperature with whipped cream or ice cream.
