Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 can cream of chicken soup
  • ½ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 can refrigerated biscuit dough, quartered

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Sauté onion until soft, then add garlic and cook briefly.
  3. Stir in chicken, frozen vegetables, cream of chicken soup, milk, salt, pepper, and thyme until well combined.
  4. Transfer mixture to the baking dish and spread evenly.
  5. Sprinkle cheese over the top.
  6. Arrange biscuit pieces evenly across the casserole.
  7. Bake uncovered for 30–35 minutes until biscuits are golden and the filling is bubbly. Let rest a few minutes before serving.

Notes

  • Leftover rotisserie chicken works well in this recipe.
  • For a thicker sauce, whisk in an extra 1/4 cup of milk or cream.
