Description

Easy Hobo Casserole: A hearty, cozy one-pan comfort dish with seasoned ground beef, potatoes, and melty cheese.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup milk
  • 1 tsp paprika
  • ½ tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375 F (190 C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook for 2 to 3 minutes until softened.
  3. Add ground beef and cook until browned. Stir in garlic, paprika, thyme, salt, and black pepper. Cook for 1 minute more, then remove from heat.
  4. In a bowl, whisk together cream of mushroom soup and milk until smooth.
  5. Layer half of the sliced potatoes in the prepared baking dish. Spread half of the cooked beef mixture over the potatoes.
  6. Pour half of the soup mixture over the beef, then sprinkle with half of the cheddar and mozzarella.
  7. Repeat layers with remaining potatoes, beef, soup mixture, and cheeses.
  8. Cover tightly with foil and bake for 50 minutes.
  9. Remove foil and bake an additional 15 to 20 minutes until potatoes are tender and cheese is golden and bubbly.
  10. Let rest for 5 to 10 minutes before serving.

  • Use a 9×13 inch baking dish for even layering.
  • Let the casserole rest 5–10 minutes before serving for clean slices.
